Juice Up at Cosmic Coconut

Until yesterday, I had no idea that I could get full from drinking juice.

I guess that when said juice is made from nothing but apples, cucumbers and mint, it acts more as a food than a beverage. If, you know, food could be that completely refreshing.

The juice in question was a Cuke Skywalker from Cosmic Coconut,  Ashley's Dunn's brand new vegan juice and smoothie bar. It was cool, tangy, extremely drinkable and very, very green:

Cosmic Coconut just opened last week, but you wouldn't be able to tell from looking at it. The space (which is in the same East Memphis shopping center as Muddy's Bakeshop) is welcoming and cozy with plenty of chairs, tables and fresh flowers. There's wheatgrass growing on the counter, a giant juicing machine and plenty of fresh fruits and vegetables.

The 100 percent vegan menu is a lot bigger than I thought it would be.

Right now, the Cosmic Coconut is only serving fresh juice, smoothies, coffee, teas and fruit bowls, but there are plans to add some snacks soon. There's also a bakery case that's got some vegan-friendly treats, like the Coconutties, which are nutrient-packed balls of chocolately goodness.

Cosmic Coconut is open daily from 7 a.m. until 1 p.m., but the hours will likely expand as the business settles in.
